Sweet Potato Chips

I got this recipe from my Weight Watchers cookbook. It was listed as a vegetable side dish, but I think it works better as a snack, seeing as you have to pay it a fair amount of attention, turning the chips individually halfway through the cooking time, and watching to see when each is done. These chips were a nice combination of sweet and salty (reminding me of chocolate covered pretzels, oddly enough). I will definitely be making them again.

SWEET POTATO CHIPS

2 t. vegetable oil

6 ounces thinly sliced sweet potato (1/8-inch thick slices) -- about 1 medium sweet potato

1 t. brown sugar

1/2 t. salt

dash ground cinnamon

Heat oven to 400 degrees. Cover bottom of cookie sheet with foil. After slicing sweet potato, drizzle the oil over and toss to coat. Place potato slices in one layer on cookie sheet. Mix brown sugar, salt, and cinnamon in small bowl, and sprinkle over sweet potato slices. Bake for 10 minutes. Turn each slice over with tongs. Reduce heat to 350 degrees and bake about 15 more minutes, or until crisp.

The book instructs you to "check for doneness frequently to prevent burning." When I peeked in the oven the first time to check, I thought I had burned some. But one taste of these salty-sweet morsels convinced me that all was well and they were progressing exactly as they should. The brown just means it's time to take them out of the oven.

Two, three, ten tastes later, I had to stop myself so I would have enough to take a picture of. The recipe is supposed to serve two (HA!). Next time I will double the recipe. And maybe still eat them all. Sorry, Weight Watchers. A girl's gotta do what a girl's gotta do.

My husband and I used to eat sweet potatoes in Japan that had been roasted over a grill. He loves sweet potatoes in his rice porridge. But the sweet potato chips sound like something the kids would enjoy as well. Thanks for another wonderful idea.

I LOOOVE Sweet Potatos - best veggie ever! I have not had anything like this - but I always get the sweet potato fries on the menu.

Glad you enjoyed "The Last Best League!" Well lets see, you need another baseball fix...my favorite baseball book which is really a memoir is "Wait Till Next Year" by D. Goodwin. But you've probably already read that one. Here are a few others that I haven't read but were recently recommended:
-"The Summer Game," R. Angell (about baseball in the '60's)
-"Crazy '08," C. Murphy (about baseball in 1908 - Cubs rejoice!)
-"A Well Paid Slave," B. Snyder (about Curt Flood's fight for Free Agency)

This one is a basketball book but I thought it was terrific:
"The Assist," N. Swidey (non-fiction as well about an inner city high school basketball coach and the kids he refuses to give up on)

Jana -- Sweet potatoes in rice porridge sounds intriguing. I've never had rice porridge; is it something you'd eat for breakfast, like oatmeal?

The Bumbles -- thank you for all the great baseball book recommendations. I might even have The Summer Game by Roger Angell already in my bookshelves, I'll have to go check. He's a great writer :) (Another great writer, btw, is Jana McBurney-Lin, whose comment is above yours. She wrote a terrific book about a young modern woman navigating her way through old-fashioned Chinese culture, called MY HALF OF THE SKY. It's a great one for reading groups, too :))

SAH in Suburbia -- I'm so glad you're going to try the sweet potato chips! I bought a big sweet potato last time I was at the store, too, because I'm going to make this again and double it. I hope you like it. Let me know how it turns out :)

I'm not a sweet potato gal but those sound good! And yes, semi sweet chocolate chips would be YUMMY in those cookies. Actually you might be on to something they might be even better then white.

Argsmommy, my Weight Watchers cookbook says one serving of sweet potato chips equals one bread exchange, one fat exchange. 138 calories per serving. And this recipe (according to THEM) serves two.

I'm glad the roasted chicken with lime turned out to be a hit with your family! :) Oh happy day. This morning in Sunday school I handed out homemade cookies to the kids, and a little boy told me, "I don't LIKE cookies." So you never can tell what will go over and what will not! :o
